Adam and Maggie Williams are done with Concord Mall, but have plans to return to a familiar location.
Adam’s Bistro closed at the mall in early February, according to Maggie. They had opened there in February 2011. Business was good. They were busy. They liked it.
“We just really weren’t the right fit for there,” said Maggie.9
Employees of businesses there were supportive and loyal customers, but other customers wanted to get their food without going in the mall, Maggie said.
Foot traffic had dropped significantly from a year ago, she said. And because of mall hours and the need to be open until 9 p.m. most nights, it was tough to get to events involving their kids, she said.
For all those reasons, they left the mall.
They reopened Unique Blend, which they’d started in 2006 at 805 Bower Street, Elkhart. They hadn’t kept it open consistently lately, but hours are now 10 a.m. to 3 p.m. Monday to Thursday, 10 to 7 Friday and 7 a.m. to 2 p.m. Sunday.
As for Adam’s Bistro - it’s going back to 1600 W. Beardsley Ave., Elkhart, where it started in 2009, she said. They hope to open soon.
The Williamses have hopped around to various locations in Elkhart and did a pop-up at last year’s Elkhart Jazz Festival. They’ve tried a number of approaches to being in the restaurant business. Adam makes food inspired by his southern roots and prices are reasonable. I hope this move offers some stability and their loyal customers are able to get what they really want, which is access to Adam’s food and the chance to interact with two very nice people.
